For the same reason we cover the salads and desserts on the potluck table: so the little kids don’t poke their fingers in them before we eat!

The kids and flies prevention concept would only fly if it was also OK to cover them with a black, red, or hot pink cloth. If not, it’s got to be plain and simple religious tradition.
